Flaming Rooster Smoked Pork Shoulder

Flaming Rooster Smoked Pork Shoulder

Ingredients

For 10 people ()

  • 1 Pork Shoulder
  • 1 Wood for Smoking
  • 1 Yellow Mustard
  • 1 Mop
  • 1 Rub

Directions

1.  Get a pork shoulder the size you need, typically ranging from 6 - 13 pounds.  A good rule of thumb is .75 pounds per person for a full meal, .5 pounds per person for a full day eating event (such as Super Bowl, July 4th, etc.).  

2.  Prep the pork shoulder using the Flaming Rooster Pork Shoulder Rub method.  Even if you aren't using that rub you can use the procedure on applying the rub.

3.  Heat the Big Green Egg or Smoker to 225 degrees.

4.  Place the pork shoulder on the grill, fat side up.  As a rule of thumb, you will need to cook the pork shoulder 1 - 1.5 hours per pound at this temperature.  Smoke the Pork Shoulder uncovered for 4 hours.  After 4 hours, wrap the Pork Shoulder in Foil and place back on the grill.  This will prevent the skin from drying out and turning black (plus the pork won't absorb anymore smoke after 3-4 hours).

5.  Smoke the meat with your favorite wood.  Flaming Rooster recommends a Pecan wood.  

6.  Smoke the meat until the thickest part of the pork shoulder reaches 195-203 degrees.  

7.  Once the pork shoulder reaches at least 150degrees, remove from the grill and follow the resting process.

Optional Step for additional flavor & moisture:

*  Mix 3/4 apple cider vinegar and 1/4 cup vegetable oil.  Put it into a spray bottle and apply to the Pork Shoulder every hour for the first 4 hours while it is uncovered.

Your recipe says in step 6 cook "until the thickest part of the pork shoulder reaches 195-203 degrees. " In step 7 it says once it reaches 150 to pull it off to rest. Can you explain how this work? Will the internal temp rise 40 degrees during resting?
