Jalapeno Potato Salad

Ingredients

For 10 people ()

  • 5 cup(s) Boiled and Peeled Idaho Potatoes
  • 4 Hard Boiled Eggs (coarsely chopped, yolk included)
  • 5 ribs celery, diced
  • 5 Green Onions, chopped
  • 0.5 Large Yellow Onion, diced
  • 2 cup(s) Mayonnaise (recommend Hellman's original)
  • 0.5 cup(s) Chopped Pickled Jalapenos
  • 1 tablespoon(s) Jalapeno Juice
  • 3 tablespoon(s) Chopped Parsley
  • 2 teaspoon(s) Comino
  • 1 teaspoon(s) Black Pepper
  • 1 teaspoon(s) Salt

Directions

1.  Peel and cube the potatoes into 3/4" squares.  Boil the cubed Potatoes 15 minutes.  For a great tip on peeling potatoes, check out this video:

2.  In large bowl, combine potatoes, celery, and both onions

3.  Combine remaining ingredients and add to potato mixture.  Mix well and chill several hours or overnight.
