Flaming Rooster Roasted Corn


For 4 people ()

  • 5 Ears of Corn (Husk on)
  • 1 Tony Chachere seasoning
  • 2 Limes
  • 0.5 cup(s) Cotija Cheese


1.  Soak the fresh corn in water with the husks on for 20 minutes.

2.  Dry the corn off and put directly on the grill with the husks on.  The grill should be medium heat.

3.  Grill the corn with the husks on for 20 minutes, flipping every 5 minutes to ensure they are cooking all the way around.

4. After 20 minutes, remove the husk from the corn and put the ears of corn directly back on the grill.  Cook for another 15 minutes, rotating them every 5 minutes.

5.  Once fully cooked (should have some browning on the corn), remove and cut the corn off into a bowl.

6.  Mix 1/2 cup of crumbled Cotija cheese into the bowl an mix well.  

7.  Garnish with Tony Chachere to taste (about 1 teaspoon).

8.  Squezze 2 fresh limes into the bowl.

9.  Mix well and serve!
