Smoked Apple Cobbler


For 8 people ()

  • 0.25 cup(s) Sugar
  • 0.25 cup(s) Brown Sugar
  • 0.5 tablespoon(s) Ground Cinnamon
  • 0.5 teaspoon(s) Nutmeg
  • 1 tablespoon(s) Fresh Lemon Juice
  • 1 cup(s) Flour
  • 0.25 cup(s) Sugar
  • 0.25 cup(s) Brown Sugar
  • 1 teaspoon(s) Baking Powder
  • 1 teaspoon(s) Salt
  • 6 tablespoon(s) Butter
  • 0.75 cup(s) Boiling Water
  • 1 tablespoon(s) Vanilla Extract
  • 1 part(s) Cherry or Apple wood


This recipe is a 2 part process.  Part 1 is prepping the Apples:

In a Gallon Ziplock bag, add 8 sliced apples (no skin) 1/4 cup white sugar, 1/4 cup brown sugar, 1/2 Tblspn Ground Cinnamon, 1/2 Tsp Nutmeg, 1 Tblspn Fresh Lemmon Juice and 1 Tblspn Vanilla Extract (if you can find Bourbon Vanilla Extract use that).  Mix all these ingredients together in the gallon ziplock and let sit at least 1 hour, no longer than 8 hours.

Heat the Big Green Egg or Smoker to 325 degree's and use either Cherry or Apple wood.  You don't want to use too much wood, just enough to flash some smoke flavor into the apples (but don't overpower them with too much smoke).  

Add 1/4 stick of butter to a tin foil pan and dump the apple mixture in there.  Let smoke for 20 - 25 minutes, until the apples are soft.

In a large mixing bowl, mix the following with a handheld blender:

1 cup flour, 1/4 cup white sugar, 1/4 cup brown sugar, 1 tsp vanilla extract, 1 tsp baking powder, 1 tsp salt, 6 tblspn butter and 2/3 cup boiling water - mix until smooth

After the apples are done cooking, remove them from the smoker or BGE.  Make sure all the wood has burned off or remove the remaining wood (you don't want to smoke the cobbler filling, just the apples).

With a large spoon glop large spoon fulls on top of the apples (6 - 8 gloppings).  Finally, sprinkle a mixture of 3:1 Sugar:Cinnamon on the top of the Cobbler.   Heat the BGE or grill to 425 degrees, put the Apple Cobbler on for 30 minutes.

Let rest for 15 minutes and serve.
