Flaming Rooster Smoked Turkey Legs


For 6 people ()

  • 1 gallon(s) Water
  • 1 cup(s) Kosher Salt
  • 0.5 cup(s) Sugar
  • 2 tablespoon(s) Onion Powder
  • 1 tablespoon(s) Garlic Powder
  • 1 tablespoon(s) Paprika
  • 1 tablespoon(s) Black Pepper
  • 1 tablespoon(s) Cumin
  • 6 Turkey Legs
  • 1 Wood for Smoking
  • 1 Olive Oil
  • 1 Turkey Leg Rub


1.  First, make the brine by mixing the water and spice ingredients into a large pot.  Bring the brine to a boil and then let cool to room temperature.  

2.  Submerge the turkey legs in the brine and refrigerate for 6 hours.

3.  Remove the turkey legs from the brine and pat dry.

4.  Apply the Flaming Rooster Turkey Leg Rub using olive oil.

5.  Get the Big Green Egg or smoker dialed in to 200 - 225 degrees.  Flaming Rooster recommends using Maple or Hickory wood for smoking turkey legs.

6.  Smoke the legs for 6 hours or until the internal temperature reaches 160 degrees.  Remove from the grill, wrap in foil and follow the resting process, allowing them to rest at least 45 minutes.
