Flaming Rooster Big Green Egg Steaks

First find your favorite steaks in the grocery store or butcher shop.  Flaming Rooster prefers Filets (and gets them from Costco - you can't be the quality & cost), however, any steak will do - ribeye, t-bone, etc.

1.  Unwrap the steaks 4 hours before putting them on the grill.  Pour olive oil on the steaks and rub in with your hands until there is an even layer of olive oil all the way around the steaks.

2.  Generously apply your seasoning of choice to the steaks.  Flaming Rooster prefers a good blend of dried garlic and pepper in a steak seasoning.  An easy and great flavor is to go with Montreal Steak Seasoning.

3.  Once the seasoning is applied, refrigerate the steaks at least 4 hours.

4.  About an hour before your grilling time, remove the steaks from the refrigerator and get them to room temperature.  This step will ensure you don't shock the meat (cold to hot) and ensure tenderness of the meat.

5.  Heat your Big Green Egg to 650 degrees.  Flaming Rooster does not prefer any wood flavor in our steaks, but if you prefer smoked steaks, pick your wood of choice.

6.  At 650 degrees, your top and bottom vents on the Big Green Egg should be open fully.  Place the steaks on the big green egg an close the lid.  Cook on the first side 1 - 2 minutes and then flip the steaks, cooking the other side the same amount of time.  This searing process closes the pores on the steak, ensuring all the flavor is captured within the steak.

7.  After the searing process, close all the vents down on the Big Green Egg.  Cook the steaks 2 - 3 minutes per side again.  Depending on the thickness and rareness of your steak (rare, medium rare, medium, well done), you might need to cook longer.  

Flaming Rooster prefers Filets medium rare - which means 90 seconds on each side during the searing process and 2 minutes each side during the cooking process (Step 7).

8.  Once your steaks have reached their desired temperature, remove them and let them rest at least 10 minutes before serving.
