Brine for Pastrami

This is the brine specifically for making pastrami.

Brine for Pastrami


For 4 people ()

  • 2 gallon(s) water
  • 0.25 cup(s) Pink Curing Salt
  • 2 tablespoon(s) Pickling Spice
  • 1 cup(s) Kosher Salt
  • 1 cup(s) Sugar
  • 0.25 cup(s) Honey
  • 5 part(s) Cloves Garlic


You will need a 5 - 10 pound brisket for the pastrami.  You want to brine the brisket for 3 - 4 WEEKS depending on the thickness of the brisket.  

Add 2 gallons of water to a pot and add the below incredients.  Bring it to a boil and simmer until all the ingredients are disovled (you won't be able to disolve the pickling spices, but that's okay).  After the simmer, get the water to room tempature by cooling the pot in the refrigerator.  After the water is cool, insert the brisket and make sure it's fully submerged.  Put the lid on a the pot and put it in the refrigerator for 3-4 weeks.
