Stuffed Jalapenos

Cheese stuffed jalapenos wrapped in bacon.

Stuffed Jalapenos


For 6 people ()

  • 4 scallions
  • 12 Whole Jalapenos
  • 8 ounce(s) softened cream cheese
  • 0.5 teaspoon(s) salt
  • 1 cup(s) shredded cheddar or mexican blend cheese
  • 0.5 teaspoon(s) pepper
  • 6 bacon slices


Slice jalapenos from top to bottom on one side being careful not to cut through.  You want to make a "pocket" for the cheese mixture.  Scoop out seeds and veins with butter knife or spoon.  Set aside.

Mix together cream cheese, cheddar cheese, salt, pepper and green onions until well combined.  Stuff jalapenos with cheese mixture without over filling.  Wrap each pepper with 1/2 piece of bacon and secure with a toothpick.

Grill for 4 or 5 minutes on each side until bacon is cooked through.
