Grilled Lobster recipe

Lobster is has a delicious natural flavor, there is no reason to get too fancy with glazes, especially when you are grilling lobster.  This is a simple recipe that will produce great tasting grilled lobster on the grill or Big Green Egg.

Ingredients

For 2 people ()

  • 2 Lobster Tails
  • 1 Lemmon
  • 0.5 Stick Butter
  • 2 Garlic Cloves

Directions

First things first - get the quantity of lobster tails you need from the local store.  Make sure the lobster tails are totally defrosted.  

  • Light the grill or Big Green Egg and get to medium heat (350 degrees).  Grilling Lobster you want to get indirect heat, so if you have a grill with 4 sections, light the exterior 2 sections on medium heat and the middle sections on low heat.  For the Big Green Egg, you light the fire with the grilling configuration and put the Lobster Tails on the outside of the grill.
  • Dice up the Garlic cloves very fine.
  • In a microwave safe dish, put the 1/2 stick of butter, fresh squezed lemon and chopped garlic - microwave 30 seconds or until the butter melts.  Mix well.
  • Get a good pair of scissors and cut the round part of the lobster (the hard top exterior) from the top to the bottom (see picture, lobster is cut down the center).
  • TRICK:  When grilling lobster it will curl as it cooks as the Lobster meat expands.  To avoid the lobster from curling, still a kabob sceware through the tail from to back (see scewer in picture).
  • You will cook the lobster in 2 phases;  Top down (where you made the cut) and top up (flat base side of the lobster tail)
  • Glaze the Lobster Tail with the butter mixture - make sure you get it down in the slit you cut on the top of the lobster tail.  Since you are doing indirect heat you don't have to worry too much about the butter catching fire.
  • Grill the lobster top down (round side with the cut down) on indirect heat 7 minutes (if you are doing a large lobster, over 1 pound, cook 10 minutes).
  • Flip the lobster over, re-glaze with the butter mixture, and cook top up (flat side of lobster on the grill) for 4 minutes.
  • Your lobster should be opaque and done.  When you deshell the lobster it should be fluffy with a bit of firmness.
