Flaming Rooster Smoked Prime Rib

We'll be honest, this recipe isn't for your everyday BBQ.  Keep this one on the sideline until you really need to impress your family & friends or for that extra special occasion.

For 8 people ()

  • 7 pound(s) Rib Beef Roast / Beef Ribeye Roast
  • 1 Prime Rib Rub


Once you have followed the Flaming Rooster Prime Rib Rub recipe and process you are almost ready to get this thing on the grill.

Flaming Rooster recommends a combination of Cherry Wood & Hickory Wood for smoking Prime Rib.  If you don't have both, one of the other will be fine.

1.  Get your smoker dialed into 225 degrees.

2.  Place the meat on the smoker with the fat side up.

3.  Smoke the meat until the internal temperature reaches 130 degrees.  This will produce a medium rare - medium end product.  For medium to well done, remove when the internal temperature reaches 140 degrees.

A smaller cut of meat (2 pounds) will cook in about 2.5 hours.  Larger cuts (4+ pounds) will take 3.5 - 5 hours.

4.  Follow the resting process, allowing the prime rib to rest at least 30 minutes.

If desired, make the Horseradish Sauce to accompany the Prime Rib - highly recommended!!
