Grilled summer squash with parsley and Parmesan cheese

Grilled Squash

Ingredients

For 6 people ()

  • 1 cup(s) Parmesan cheese, shaved
  • 4 tablespoon(s) olive oil
  • 1 lemon, juiced and zested
  • 1 sweet or yellow onion, sliced
  • 1.5 pound(s) yellow squash
  • 0.5 teaspoon(s) pepper

Directions

Drizzle squash and onion with 2 tablespoons olive oil.  Sprinkle with salt and pepper.  Grill for 3-5 minutes on each side.  Remove from heat.  Toss with remaining olive oil, lemon juice and zest, and parsley.  Sprinkle parmesean cheese over vegetables.  Salt and pepper to taste.
