Unlike other meats that even though done you should cook longer for flavor, chicken does not apply. Cooking chicken beyond 165 degrees will cause it to dry out and lose flavor pretty quickly.
On the flip side, you don't want to under cook chicken - this is an easy way to get everybody sick.
